L-Carnosine inhibits the formation of AGEs, the oxidative end-products of sugar, and its structure resembles the site of protein glycosylation, making it a good target for glycosylation. By sacrificing itself to prevent protein glycosylation, myostatin neutralizes carbonyl groups attacking cell membrane proteins, thus preventing proteins from receiving cross-linking damage.
